Sfoglini pastas combine Italian technique and American ingredients. They are made in New York’s Hudson Valley with organic grains grown and milled on North American farms, bronze die extruded (resulting in a rough texture that makes the sauce stick) and slow dried (to preserve flavors and nutrients).
