Now selling “upcycled” Renewal Mills baking products (bulk)

Renewal Mills products are upcycled: They are made with “okara”, the leftover soybean pulp from tofu production that would otherwise have been wasted. It reduces food waste and its environmental impacts, while allowing from delicious recipes, high in protein and fiber:

  • 1-to-1 gluten-free flour: Can substitute wheat flour in any recipe (1 cup= 1 cup).
  • Black Chocolate Brownie Mix: Just add vegetable oil and water to bake a delicious vegan, gluten-free cake.

A Fun Way to Use Plantains

Ripe Plantains

I was so excited to see plantains at the co-op a couple of weeks ago because I finally got the chance to try out this recipe from The Kitchenista Diaries for plantains stuffed with black beans and cheese. 

One of my favorite things about shopping at the co-op is the high quality seasonal produce. These plantains were grown in Mexico and sold through Organics Unlimited, an organization known for its strong commitment to social responsibility. Their Giving Resources and Opportunities to Workers (GROW) program helps provide clean drinking water and educational, dental and vision services for farm workers and their communities.

Seasonal treasures from both near and far

Ramps
Ramps, also known as wild leeks, are sustainably harvested for the co-op by a forager we’ve worked with since 2012. He and his team forage in Ulster County, NY, and the Pocono Mountains in Northeastern Pennsylvania. They take only a small amount from each patch and hike high into the mountains to ensure that easily accessible fields aren’t overharvested. This is the last week of the season — ramps will return in spring 2020. Looking forward, there will be locally grown garlic scapes in June and cured cloves of garlic by mid-August.
