Nettle Soup

I found the basic recipe for this nettle soup on a frugal living website http://www.frugal.org.uk/nettle.html but adapted it slightly. Its a really delicious soup and so simple to make.

Ingredients:

  • 2 tablespoons olive oil

  • 2 tablespoons of whole wheat flour

  • 1 onion, roughly chopped

  • 2 cloves garlic, chopped

  • Several handfuls of fresh young nettles

  • 2 cups of soy milk or similar. (I used a mixture of soy and amazake (sold as Eden Blend) which worked very well. Next time I will try hemp or almond milk).

  • 1 cup water or stock

salt and pepper to taste

Sautee the onion and garlic in the oil for a few minutes then stir in the nettles (no need to chop or remove stalks) until they soften. Stir in the flour and gradually add the liquids, stirring all the time. Remove from heat and cool slightly. Puree in blender or food processor. Return to heat adding salt and pepper to taste.
