Another 'wonder food' that is too often underappreciated. This was a principle crop of the (mainly vegetarian) Aztecs and is high in protein and provides lysine (an amino acid grains lack) plus vitamin E and B-complex. And, if you need more reasons for eating amaranth...it was a mainstay of the Aztec diet because it has very high yields and grows very efficiently requiring less water and energy than other grains. Growing more amaranth would be a much better use of land and resources than using it all for soy and corn! Amaranth has a nutty flavor a little similar to millet. Eat as you would any other grain or add it to other grains for added flavor and nutrition. Or sprout it and get the added benefits of vitamins A, B, C and E, calcium, iron, magnesium, phosphorus, potassium...and the list goes on.
